Ketchup with Cultivate

All the Right Ingredients

Is everyone dreaming about spring break, the beach and seafood? Chef Randy Z is!

Shrimp Relish

1 cup small raw shrimp – peeled, deveined, and chopped
1 cup sour cream (for a healthier option, substitute plain or key lime yogurt)
¼ cup red bell pepper diced
¼ cup cucumber – peeled, seeded, and diced
¼ cup green onions – diced
2 tsp. old bay seasoning, divided
1 tbsp. unsalted butter

Over medium heat, melt butter and add 1 ½ tsp. of old bay seasoning and shrimp. Cook until shrimp reaches 145 degrees (about 3 to 4 minutes), remove from heat and let cool for 10 minutes. Place in refrigerator uncovered until fully cool (40 degrees) . Mix remaining ingredients together and fold in shrimp. Cover and refrigerate for at least 1 hour and up to 2 days.

Goes well with crackers, pitas, bibb lettuce, little gem lettuce and great on a fish sandwich or as a vegetable dip.

Volunteer Spotlight

March Meal Madness – Have you been keeping up with the madness that takes place on the basketball court this month? We’ve been witnessing some of our own madness at Cultivate with our first ever March Meal Madness competition! Nine teams are competing to produce meals and raise money to support Cultivate’s mission to fight hunger and reduce food waste. Volunteers assist us with one of the greatest tasks at Cultivate, putting together the meals that are distributed to hungry students over the weekend. We are currently producing an average of 7,600 meals every week and we couldn’t do it without our hundreds of volunteers. However, in order to make these meals and get them to our most vulnerable community members, we have to raise enough support to get these meals out the door. The purpose of this month’s competition is to bring awareness to the connection between volunteers and fundraising. Your donations of time, talent, and treasure are all crucial contributions toward Cultivate’s impact.

4 of our 9 March Meal Madness teams have already produced 3,800 meals! Collectively the group has raised $1,147, and you can still support your favorite team before the end of the month. Check out the link to support this campaign and donate to the team of your choice.
